We are an artisanal taquería striving to bring fresh, innovative California-Mexican cuisine to Würzburg. We believe in using as many homemade ingredients as possible in order to ensure that our visitors can enjoy the pure pleasure of exciting and unique flavor combinations. That is why every day we make our own tortillas, along with all of our salsas, homemade lemonade and iced tea, along with various other ingredients that go into our dishes. We have an open kitchen in order to support our own culinary ideology that restaurants should not only be transparent, but should want to have customers observing the way that their food is being prepared.
The name Maíz comes from the Spanish word for “corn”. The corn tortilla dates back hundreds of years and is a staple in the diet of many American cultures. Its beauty lies not only in its simplicity and flavor, but also in the ability to pick up your food with your hands as you eat, to interact with your meal using all of your senses. Metaphorically, we perceive the corn tortilla as a blank canvas that allows our head chef and co-owner Jonah Ramos the ability to artistically create inspiring flavor profiles.
We also do our best to provide visitors with excellent service and a comfortable, friendly atmosphere. With free refills on our homemade lemonade and iced tea, friendly staff and relaxed ambience, we try to surround our great tasting food with a positive, fun and unique experience.
About the Owners:
Jonah Ramos is the head chef. With over 17-years of experience in the kitchen, including renowned Michelin-star restaurants, Jonah believes in providing customers with affordable, fresh, and exciting food. Born in Massachusetts, U.S.A. and raised in germany, jonah has lived in both countries as well as travelled to numerous locations in order to gather inspiration for his culinary repertoire. His Hispanic background has served as a major impetus for the desire to extend the influence of Mexican cuisine and demonstrate how intriguing it can be by fusing traditional methods with multi-cultural influences.
Prof. Dr. David Toumajian was a marketing professor, specializing in consumer behavior, before making the transition to the restaurant industry. Born in Los Angeles, California, he has lived, worked and studied in the U.S.A., Denmark, Spain and Germany. David strives to ensure the experiential component of dining, believing that your time in the restaurant is not merely composed of ingesting excellent food, but that the service experience can be enhanced by transporting customers to a different place. A strong advocate of multi-culturalism and inclusion, David is trying to create a warm, friendly, open atmosphere that is not defined or restricted by the conventional norms of any one particular geographic location.
