My vision is to bottle expressive wines, which are characteristic for the vintage, the variety and our lime stone terroir.
A couple years ago, Jens Bettenheimer took over the family winery, to continue the Bettenheimers winemaking tradition of over 550 years. His lifeblood depends on the classic grape varieties. In the many over 30 years old vineyards with the beginning of the flowering every second shoot of the cane removed by hand. In the vineyard work, the interaction of the phases of the moon guarantee an optimal leaf fruit ratio. Strict picking by hand in small containers allows processing of grapes without any pumps. A longer chilled sedimentation promotes the typical aromas and the spontaneous fermentation. The individual and mineral wines, carefully stored until bottling and storage at low temperatures on the yeast to promote the internal density.
All red wines are stored in the Rheinhessen oak barrels (1200 liters) or in barriques according to the traditional maceration.
